Bake some soft and tasty Vegan Blueberry Muffins.

- Preheat oven
- Oil the muffin tray or tins
- Use a small bowl and mix soy milk with apple cider vinegar
- Use a larger bowl to mix the flour, baking powder, baking soda and salt
- Use another bowl to mix the sugar, canola oil, lemon zest and vanilla extract
- Add soy milk and the vinegar mixture and stir to combine
- Add the dry ingredients and stir
- Add blueberries and spoon mixed ingredients into the muffin tray or tins
- Bake for 20-25 minutes
- Remove from oven and let it cool before removing from the tray or tins
