Vegan spud with a healthy mix of vegetables topped with Vegan Cheese

- Peel the potatoes. Approx 2 medium sized per person. 8 in total for 4 people.
- Use a fork to poke the potatoes so that they can boil quicker
- Place the potatoes in a pot with boiled water. Let it boil until the potatoes a soft (you can test by poking the potatoes with a fork)
- Cut the tomatoes, cucumber, broccoli, mushrooms
- Lightly fry the mushroom in a pan
- Boil the broccoli until soft
- Place the boiled potatoes in a ceramic bowl and add the cheese on top
- Bake the potatoes in the over at 250 degrees until the cheese melts
- Add your favourite veggies - tomatoes, cucumber, broccoli, mushroom, corns and beetroot
